Refreshing kimchi is served in a pancake along with tender squid and four types of veggies
Ranked as one of the most beloved pancake among many in Korean cuisine, it brings out the flavor of kimchi while blending beautifully with other ingredients.
Add vegetables, kimchi for kimchi pancake, pancake mix to a bowl.
Add squid for kimchi pancake and 130mL of water (per serving) to the bowl.
Heat 2 Tablespoons of olive oil in a pan.
Add one serving portion of ingredients from the bowl. Spread them flat evenly over the pan.
Heat on medium-high heat while pressing down with spoon for 4~6 minutes.
Flip the pancake. Add 1 Tablespoon of olive oil on the sides of the pan so the oil flows beneath the pancake.
Heat on medium-high heat while pressing down with spoon for 4~6 minutes. Flip one more time.
Repeat per additional servings.
