Add garlic & scallion and stir on medium heat for 1 minute. Add chicken thigh for stir fry and a pinch of salt & pepper.
Stir on medium-high heat for 2~4 minutes.
Add 3/4 of sauce to the pan.
Stir on medium-high heat for 3~5 minutes (until almost all liquid has evaporated).
Move the chicken to a plate.
Heat 1 Tablespoon of olive oil to the pan.
Add vegetables, rest of the sauce and a pinch of salt & pepper to the pan.
Stir on medium-high heat for 2~4 minutes.
Add chicken back to the pan. Stir on medium-high heat for 1~2 minutes.
